VEG FRIED RICE / CHINESE VEG FRIED RICE

Chinese veg fried rice is an Asian flavored rice dish, actually it’s a fusion of Indian and Chinese flavors so it would be more appropriate to call it an Indo Chinese  recipe. This is the most popular dish to order in any Chinese restaurant, and it’s a quick and easy to make dish at home too, best served with some Veg Manchurian or any Chinese , Indo Chinese gravy.

This fried rice is a wholesome and healthy dish as you can add all the wonderful healthy and colorful veggies and toss it with some light soya sauce and chili sauce ….even the fussiest kid in the house would enjoy it without any tantrums believe me… this was the only dish my child enjoyed everytime when he was growing up and feeding vegetables to him was a big problem for me, that time I used to make this fried rice a bit mild in taste to suit his tastebuds, and he used to eat up his bowl of fried rice without any fuss… I was so happy as my mission of feeding him vegetables was accomplished…

This recipe is so versatile if you are making for kids then make it milder with less sauces and no pepper, and if making for grownups then spike it up with a little more spice and sauce, just adapt according to your taste buds and it’s always a winner with everybody…

The crucial part in making this dish is to cook the rice to perfection till all the grains of rice is well cooked and the grains of rice are separate from each other, take care not to overcook the rice as the rice will be again cooked for a short while when tossed with the veggies in the final stage.. it’s just  a flash cooking of the veggies in the hot wok along with sauces ,salt , pepper and at the last moment throw in the perfectly cooked rice , toss quickly and your hot steaming Chinese veg fried rice is ready to be devoured with some bold Chinese gravy or as it is …

Ingredients :

  • 150 gms- Basmati rice soaked for ½ hour
  • ½ a juice- Of a small Lemon (to be added while boiling the rice)
  • 1 tsp- Oil (to be added while boiling the rice)
  • Little bit of Salt (to be added while boiling the rice)
  • 1 tbsp.- Ginger finely minced or chopped
  • 1 tbsp.- Garlic finely minced or chopped
  • 1 tbsp. -Green chilly finely minced or chopped ( Optional)
  • 3 Coloured Bell Peppers ( Red, Green, Yellow) ½ each chopped into small dices as shown in the pic below.
  • 1nos – Carrot chopped into small dices
  • 1 medium -Onion finely chopped
  • ½ cup- Spring onion greens finely chopped
  • 1 tbsp. Soya sauce
  • 1 tbsp. -Green chili sauce
  • 1 tbsp.- White Vinegar
  • A big pinch of -Ajinomoto ( Optional)
  • Salt and pepper to taste
  • 2 tbsp. -Oil to cook the fried rice
  • Water to cook the rice

METHOD:

  1. Soak the rice for 1/ an hour, wash the  rice thoroughly 4 to 5 times till the water runs clear drain our all the excess water.
  2. Heat enough water to cook the rice in a big deep vessel and add 1 tsp. oil, ½ a juice of lemon and a bit salt to the boiling water.
  3. When the water comes to a rolling boil add the presoaked , washed and drained rice and cook on medium flame till the rice is 95 percent cooked (  Don’t overcook the rice as the rice will be once again cooked while stir frying with the veggies )
  4. When the rice is cooked drain off the excess water from the rice and transfer the rice to a bigger plate or tray to cool it down under fan air to stop the overcooking process of the rice , by doing this you will get each grain of rice separate .
  5. While the rice is cooling heat a wok or a flat frying pan with 2 tbsp. of oil and add minced ginger, garlic and green chilies and fry for few seconds then add the chopped onion and fry till pink.
  6. Add all the chopped veggies and give a quick stir fry on high heat for few seconds, add salt, pepper and ajinomoto and give a quick mix. ( Ajinomoto is optional I don’t add it )
  7. Now make a well in the center of the veggies and add the soya sauce, chili sauce, and vinegar and let the sauces bubble then mix them with the veggies.
  8. Add the cooked and cooled rice in , mix the rice and veggies by lightly tossing them, or mix very gently taking care not to break the grains of the rice, cook on high flame for a few seconds and then switch off the flame.
  9. At last add the finely chopped spring onion greens, saving a few for garnish afterwards, give a quick mix and taste for the seasonings, adjust accordingly.
  10. You Chinese style veg fried rice is ready to be served with any Chinese gravy or as it is, enjoy it piping hot…

  1. While boiling the rice take care not to overcook the rice otherwise the grains of the rice will not be separate and the fried rice won’t come out nice in texture.
  2. Adding oil and lemon juice to the boiling water makes the rice grains white and separate from each other when cooked.
  3. I always prefer 1 day old cooked rice or leftover rice to make this fried rice as that rice gives the best fried rice ever, with separate grains of rice always.
  4. Don’t overcook the veggies as in fried rice we need to have the crunch from the veggies, as it gives the fried rice a good texture to bite in.
  5. The proportions of sauces and vinegar can be altered as per the taste buds of each family it’s up to personal preferences.
  6. Other veggies like cabbage, boiled corn kernels, and blanched French beans can also be added to the fried rice to make it more healthy and nutritious for children’s and adults both..
