Tandoori Aloo is a good starter for any party or gathering and is a hot favourite among kids. This is my twisted recipe for this dish. The original recipe, however, uses thick curd but I tried it with lemon juice and it turned out tangier and tastier. It is traditionally made using tandoors, but my short cut method of stove-top cooking is much more convenient and hassle free. Hope you all try it and like it.

Recipe for tandoori Aloo (Stove top method)

  • 15 to 20 nos – Baby potatoes
  • 1 tsp – Ginger garlic paste
  • 1 tsp – Tandoori masala
  • 1 tbsp – Roasted besan (gram flour)
  • 1/4th tsp – Crushed ajwain (carom seeds)
  • 1 tsp – Deghi mirch
  • 1/2 tsp – Kashmiri mirch powder
  • 2 tbsp – Lemon juice
  • 1 tsp – Roasted and crushed kasoori methi (Dried Fenugreek Leaf)
  • 1 tsp – Oil to add in marinate
  • 1 tbsp – Oil for frying
  • Salt to taste
  • Satay stick soaked in water for 5 mins

  1. Take the baby potatoes and boil them in salted water till done. Then drain the water and let them cool a bit, peel them and prick them all over with a fork. (By pricking the potatoes after boiling will help the masala or marinate to get absorbed by the potatoes deeply).
  2. Mix all the masalas listed in the ingredients along with one tsp oil, lemon juice and marinate the potatoes in the masala for 3 – 4 hours.
  3. Skewer them on satay sticks tightly with no gaps in between.
  4. Heat a non-stick pan with a bit of oil and arrange the satay sticks with potatoes in the pan and cook them on high flame turning at intervals till done.
  5. Switch off the flame and pick each satay stick individually and hold them directly on the gas flame and roast them for few seconds on all the sides. (Doing this will give a smokey flavour to the potatoes and you will get the same tandoori effect as if you had cooked in a tandoor. This is my hassle-free stove top method).
  6. Repeat this for all the potato sticks and serve them with some chat masala sprinkled on top; accompanied with some onion rings, lemon wedges and Dahi chutney.
  7. Serve smoking hot with love.

      Hi Cndhu I have always roasted it on a gas flame , but on coil stove you can put a wire mesh and then try roasting it , have not tried coil stove so can’t say much about it . Do try on direct flame and see how it works.

        Thank you Soma. I found it. I made the potatoes for dinner tonight and they were delicious. A keeper. Didn’t make chutney as I ran out of time but will try soon.

          Sorry forgot to say that the potatoes should be skewered tightly with no gaps in between. I didn’t and when I put the first stick on the open flame the open part between the potatoes started burning. I fixed it for the rest of them. Your picture does show that, but might be a good idea to also update the recipe. Hope you don’t mind this suggestion.
