My childhood memories are associated with these desi cookies. Every year when we used to visit our Mama’s (Maternal uncle) place Banaras for winter vacation, we always used to have these soft, melt-in-the-mouth desi cookies, hot and fresh from the local bakeries. And believe me, it was pure bliss. I still remember the whiff of the freshly baked nankhatais coming from the bakeries, and somehow we would pull our mamujaan to buy us some.

I always used to miss these nankhatais. So to satisfy my cravings, I came up with this recipe, now I can bring Banaras’ bakeries to my kitchen anytime. I get the same enchanting aroma every time I bake these beauties. Do try and give me your feedback, if possible.

RECIPE FOR SOOJI NANKHATAIS:

  • 1 cup – Whole wheat atta (flour)
  • 1 cup – Maida (Refined flour)
  • ½ cup – Fine sooji (Semolina)
  • ½ cup – Besan (Bengal gram flour)
  • 1 ¼ tsp – Baking powder
  • 1 cup – Ground sugar
  • 1 ½ tsp – Elaichi (cardamom) powder
  • ¼ cup – Dahi (curd)
  • 1 cup – Ghee (clarified butter)

Method:

  1. Mix all the dry ingredients and wet ingredients together to form a dough, cover and refrigerate for 2 to 3 hours.
  2. Take it out and make it into small lemon-sized balls. Garnish with almond flakes or just make some cross marks on top and bake in a preheated oven at 180°C for 15 to 20 minutes.
  3. Cool and store in an airtight jar. Enjoy with you tea or coffee!
