Valentine’s Day is just around the corner and if you are still searching for a dessert recipe to give a grand finale to your special Valentine’s Day dinner date and celebrate love day with a sweet note then this cute Skillet brownie is what you ever needed to surprise your Valentine…

This quick dessert for two topped with a scoop of vanilla ice cream is so decedent yet so easy to make that once you try it you will get hooked to it forever, I must warn you this recipe is too addictive so beware… But as it’s in a small portion so over indulgence can’t be done and once in a while its ok to satisfy your cravings don’t you agree…

This recipe of skillet brownie has the perfect crispy edge and a warm gooey center that’s just so perfect….mmmmmmm….. It’s a perfect sized dessert to share with your Soul mate, your Valentine, but if you love chocolates and a chocoholic, you might not want to share it either! Trust me when the dessert is so delicious you could get greedy sometimes, but it’s ok who is going to judge you….Enjoy!!
I have baked this in a cute little cast iron pan I bought recently online, and baking the brownie in a cast iron pan has given an amazing texture to the whole dessert, but if you don’t have these mini skillets then go ahead bake them in any ovenproof bowl or pan you have, no issues the taste won’t change only the presentation would.

RECIPE FOR SKILLET BROWNIE SUNDAE (Valentine’s Day Special)
Ingredients:

  • 8 tbsp – Semi sweet Dark Chocolate chopped (use good quality chocolate for good results)
  • 8 tbsp – Unsalted Butter softened (at room temperature but not melted)
  • 2 nos – Eggs
  • 2 tsp – Instant coffee powder
  • 1tsp – Vanilla extract or essence
  • 6 tbsp – Powdered sugar
  • ¼ th cup – All-purpose flour (Maida)
  • ½ tsp – Baking powder
  • A pinch of salt
  • 4 to 5 tbsp – Chocolate chopped into small chunks ( semi sweet )
  • 1 tbsp – All-purpose flour ( Maida)
  • Butter for greasing the pan
  • Tinned cherry for topping
  • Vanilla ice cream to serve with
  • Chocolate sauce to serve with
  • Small sized cast iron skillet, or any small ovenproof pan or skillet to bake the brownie in.

  1. Preheat the oven to 180degrees C or 350 degrees F for 15 mins.
  2. Take the chopped chocolate 8 tbsp in a microwave safe bowl, add to it the 8 tbsp butter softened and melt it in the microwave with 20 seconds intervals,  stirring in between, (mine was melted fully in by giving 2 times for 20 seconds, after each 20 second take out and stir nicely everything, it may look that it has not melted but by stirring it will) let it cool down a bit before using it in the recipe further.
  3. In another bowl break open 2 eggs, add 2 tsp of instant coffee powder, powdered sugar, vanilla extract or essence and whisk well till the sugar and coffee is dissolved fully and everything is well combined.
  4. Then add the above-melted chocolate and butter mixture to the eggs mixture and whisk well till everything is well incorporated.
  5. In another bowl sieve together ¼ th cup flour, ½ tsp baking powder and a pinch of salt and add to the above eggs and chocolate mixture, mix well till the flour is well incorporated and the batter is lump free.
  6. Now mix 4 to 5 tbsp of dark chocolate chopped into chunks with 1 tbsp of flour and add to the above-prepared brownie batter and mix well.(mixing the chocolate chunks with the extra dry flour will ensure that the chocolate chunks doesn’t sink at the bottom of the brownie while baking.)
  7. Grease a mini cast iron skillet with butter and pour the brownie batter until ¾ th full , don’t fill the pan fully or it will rise while baking and ooze out of the mini pan. ( I have used 6.5” inch diameter small pan, you can use 5” inch or else 3” inch small cast iron pans and make individual portions to divide the batter accordingly in multiple pans in that case)
  8. Place the pan or pans filled with the batter 3/4th full on a baking tray and bake in a preheated oven in middle rack for 22 to 25 minutes or till done at 180 degrees C.
  9. When done checks with a toothpick the edges of the brownie would be crispy and the center would be still gooey.
  10. Take it out and let it rest for few seconds, serve it hot or warm with a scoop of vanilla ice cream, drizzled with chocolate sauce and topped with a cherry. Share with your Valentine or if you are greedy enough and don’t want to share it go ahead, I am not there to judge you… enjoy…indulge in it…. Happy Valentine’s Day!!! ❤️❤️❤️

  1. This recipe makes a big portion to satisfy 2 hungry souls.
  2. Do not over-bake the brownie otherwise you won’t get the warm gooey center it would turn all cakey by over baking.
  3. Serve it immediately after baking just give enough time till it is hot  but not scorching hot , if you don’t like it hot then wait till its has come down to light warm temperature, top with ice cream and cherry serve, the contrast in temperature makes this particular dessert so tempting and romantic.
  4. If you are not thinking of sharing it then bake them in even smaller individual pans or skillets. If you don’t have cast iron skillet then it can be even baked in any small ovenproof dish or pan or even individual bowl or ramekins.
  5. I have added a little bit more coffee to my brownie batter as I like the flavor too much but if you wish you can reduce to your preferences.
  6. Do use semisweet or dark chocolates of good quality for this recipe. Any cheap quality chocolate won’t give this dessert its decedent and rich feel.
  7. You could also add chopped walnuts if you like in the batter.
  8. If you are thinking of baking it prior to your valentines date dinner, then just reheat it in oven for some time so that the brownie gets warm before serving. Or else measure everything and keep ready and when you start your dinner just mix everything and put it in the oven to bake till you finish your dinner it would be baked and ready to serve immediately.
