Sweet, spicy, super fresh and refreshing Pineapple salsa is always a crowd pleaser at any party or get-together’s at my place. This sweet spicy and tangy Pineapple salsa is your answer to summer snacking without worrying about your waistline.  You can serve this salsa with any grilled fish, seafood or any meat as a side, it goes awesome with quesadillas, tacos or as a salad by itself, you can also serve this as a starter with some homemade nacho chips or tortilla chips. Ingredients:

  • ½ – Pineapple (small size )chopped into small pieces
  • 1 – Tomato chopped finely
  • 1- Red Onion medium sized chopped finely
  • 1 – Medium Capsicum deseeded and chopped finely
  • 2 to 3 tbsp – Fresh coriander leaves/ Cilantro leaves chopped finely
  • 1 tbsp – Red Jalapeno’s pickled chopped finely ( For recipe click here)
  • 1 tbsp – Green Jalapeno’s pickled chopped finely
  • 1 tsp – Green chilly chopped finely
  • 1 tbsp – Lemon juice
  • ½ tsp – Cumin powder ( Optional)
  • 1 tbsp – hot sauce ( Tabasco sauce) or as per tolerance level
  • Sugar to taste
  • Salt and pepper to taste

METHOD:

  1. In a large bowl combine chopped pineapples, tomatoes, onions, capsicum, red and green pickled jalapenos, coriander leaves, &green chilies.
  2. Add the roasted cumin powder, lemon juice, hot pepper sauce, salt , sugar and pepper powder and mix well .
  3. Allow the flavors to blend in for some time or else make it 30 minutes prior to serving and chill in the refrigerator until serving.
  4. Serve with Nacho chips, tacos, or accompany it with any grilled food, tastes awesome just as a salad with any meal.
