Summer has arrived with a bang and in this hot sultry weather we don’t feel like having heavy rich meals, what I like in this weather is bowlfuls of fresh crisp salad with a dressing according to my mood. And the best thing about salads is you can play with ingredients and flavours  & come up with a new variety of salad each time.
This was one such day I didn’t want to hog over hot stove for long but wanted to fix a quick and healthy meal for my family. Raided my refrigerator and found some fresh crisp lettuce, cherry tomatoes, and some other crisp veggies so it had to be a salad for dinner tonight for sure. Wanted to make this bowlful of salad a whole meal in itself so searched more and saw some chunks of paneer marinating for making paneer tikka, also found a bag of nachos I was sorted then.

Quickly washed and chopped the veggies, tore up the lettuce in a big salad bowl, grilled the paneer tikka on pan, finished them on direct flame for a few seconds, chopped them up into little pieces and added them to the salad bowl. Made a tangy dressing and tossed everything in, served in individual plates and garnished it with some fresh cilantro leaves and crushed some crisp nacho chips on top and we were ready to dig in. The nacho chips gave the salad a nice crunchy twist and the soft succulent pieces of spicy paneer tikka was taking this dish to another level, everyone enjoyed this light, healthy but yummy meal to its core and took second helpings too, we didn’t had anything else with this but if you like you can have some toasted garlic bread to accompany the salad and make the meal more filling.

IMG_8226RECIPE FOR PANEER TIKKA SALAD WITH NACHOS
Ingredients for the Salad:

  • 2 bunches of – Romaine Lettuce (washed drained and torn into pieces roughly)
  • 1 small – Green Capsicum deseeded and chopped roughly
  • 10 to 12 nos – Cherry tomatoes washed and cut into halves (or else use normal tomatoes cut into cubes)
  • 1 small – Red Onion chopped finely
  • ¼ th cup – Frozen Corn
  • ¼ th cup – Black beans cooked (take either tinned or soak dried ones overnight and cook till done but not mushy) this ingredient is optional as I didn’t had any I skipped it if you like you can add it to add more proteins to the salad.
  • 8 to 10 pieces – Paneer tikka already cooked and cut into small pieces (For recipe click here) (while making paneer tikka avoid the capsicum onion and tomato cubes added in the middle just use paneer and follow the recipe given)
  • 2 to 3 tbsp – Roughly chopped fresh coriander leaves ( or cilantro leaves)
  • 1 tbsp – Pickled red hot peppers (for recipe click here) or else use store-bought bottled ones known as pickled red jalapenos.
  • Dressing Sauce as needed (recipe given below do scroll down)
  • Nacho chips as needed (for recipe click here) or else use store bought ones.
  • Salt and pepper to taste as needed.

Ingredients for the Creamy Salad Dressing:

  • ¾ th cup – Eggless Mayonnaise or any Mayo you have( I have used low-fat version)
  • 3 to 4 tbsp – Tomato ketchup or Hot and sweet tomato sauce
  • 1 tsp – Tabasco sauce or any other Hot sauce
  • 1 tsp – Barbeque sauce
  • 1 tsp – Mustard sauce
  • 1 tbsp – Sweet onion sauce(optional)
  • ½ or 3/4th tsp – Finely Grated garlic
  • 4 to 5 tbsp – Finely chopped onions
  • 2 tbsp – Finely chopped Pickled Gherkins or Cucumbers ( optional but recommended)
  • Salt and pepper as needed ( remember the sauces already has salt so add salt accordingly)

Method to make the Creamy Salad dressing:

  1. Take all the ingredients in a bowl one by one and whisk lightly to mix evenly, when everything is well incorporated, taste and adjust the sauces and seasonings as needed. There should be a perfect balance in the flavors  in the dressing.
  2. Keep the dressing in the refrigerator for half an hour before tossing the salad with it.

  1. Marinate and cook the paneer tikka as per the recipe given already on my blog (For Recipe Click Here), bring it to room temperature after cooking and grilling. Then cut them up into small pieces, keep aside.
  2. Defrost the frozen corn and toss roast it on a pan till lightly roasted, take out and let them cool, keep aside.
  3. In a salad bowl take the washed and torn Romaine lettuce leaves, add in the chopped capsicum, onions, cherry tomatoes, roasted corn, cooked and chopped paneer tikka, pickled red hot peppers, and roughly chopped coriander leaves, if you are using black beans then add it now.
  4. Drizzle the salad ingridents with the above-made dressing and toss well, at last, add some crushed nacho chips for the crunch factor & garnish with fresh coriander or cilantro leaves, serve immediately.

  1. Here I have used the salad veggies as per my availability of ingredients, you can also use cucumbers, avocados etc.
  2. If cherry tomatoes are not available then feel free to use chunks of normal-sized tomatoes. I have used cherry tomatoes as they are sweeter in taste than normal tomatoes and looks beautiful.
  3. The quantity of the sauces can be altered as per personal taste buds, and grated cheese can also be added to the salad if you wish, I have given the quantity of sauces according to my tastebuds.
  4. I have made this salad with paneer tikka, but you can use any variety of grilled paneer, or tofu you like, and non-vegetarians can also add chicken tikka, or barbeque chicken or any meat they prefer to make a non-veg version of the same salad.
  5. Wash and drain the lettuce leaves properly, if there is excess moisture in the leaves then it will affect the taste and crispness of the salad.
  6.
