Nolen gurer narkeler nadu is another bong favourite sweet, this sweet is generally made on various festivals like Durga pujo, Lokkhi Pujo (Lakshmi puja), Poush Parbon (Makarsankranti) etc., we Bengali’s just need the reason to enjoy sweets so it may be any occasion or not we make these gorgeous dark beauties any time we crave for it.
This sweet is one of the easiest sweets which is made in every Bengali house, as it can be made in a jiffy with only 3 to 4 basic ingredients, I generally make different varieties of this coconut laddos as per the ingredients available in my kitchen pantry. It can be made with white sugar, it can be made with normal sugarcane jaggery and my most favorite is with dates palm jaggery, which gives a smoky flavor to the laddus , the sugar ones look white and the ones made with jaggery are the ones that have a nice sticky texture, similar to eclairs texture which I love the most and it’s a healthy choice of sweet as its made with jaggery and not white sugar.

FullSizeRender_3RECIPE FOR NOLEN GURER NARKEL NADU:

Ingredients:

  • 2 medium size – Coconuts freshly scraped or grated
  • 2 cups – Dates palm jaggery grated (Nolen gur or khejur gur)
  • ½ cup – Sugar
  • ½ cup – Khoya grated (Solidified milk)
  • ½ tsp – Green cardamom powder (Elachi powder)

  1. Take a wide nonstick pan add scraped or grated coconut, grated jaggery and sugar mix everything with your hands till mixed well.
  2. Place the pan on low to medium heat and keep on stirring, cook the mixture on low flame take care not to burn it.
  3. When you see the mixture is turning into a sticky mass add grated khoya and elachi powder.
  4. Keep on cooking till everything is well incorporated and the mixture looks sticky, at this stage if you pick up the mixture it will form small lumps.
  5. Switch off the flame and take out the mixture on a greased plate.
  6. Apply some water on your hands ,take small quantities of the coconut mixture in your hand and form laddos immediately, if the mixture becomes cool it would be hard to form the laddos, make all the laddos and let them cool. Enjoy your healthy and yummy nolen gurer narkeler nadu.

  1. If you din’t get dates palm jaggery then you can use sugar or normal jaggery, have shared the recipes in my blog do check.
  2. Do not forget to grease or wet your palms before shaping the laddos to avoid sticking.
  3. As after cooking the jaggery and sugar caramelizes so you have to shape the laddos quick other wise when the mixture comes in contact with the air it will start to harden and thus you won’t be able to shape the laddos properly.
  4. Always use freshly grated coconut or else frozen coconuts can also be used .
  5. If you don’t have a coconut scraper, then you can cut the coconut into small pieces and blitz in a food processor or mixer grinder till it forms a scraped texture , make sure you don’t make a paste of coconut in this process by over grinding it.
  6. Using of khoya or mava is optional.
  7. You can avoid the sugar and adjust the sweetness according to your tastebuds. My family loves there sweets nice and sugary so I have added this much quantity of sugar and jaggery. Adjust accordingly.
