Nankhatai is my all time favourite desi cookies as it needs very less ingredients and can be made in a jiffy anytime you crave for these. My memories of eating nankhatais are related to my mama’s city Banaras. Whenever we used to visit him, he used to bring us these amazing melt-in-mouth Nankhatis, which were to die for. Even now somewhere in my memory these desi cookies are there which we used to get during Rath Yatra festival specially. My mama used to take us to those little bakeries in banaras where the tempting aroma of freshly baked Nankhatais, used to make us jump with joy. The best memories of my childhood I am sharing with you in the form of these Nankhatais. This is my version of these sinfull goodies to enjoy hot from the oven with a cuppa of hot ginger tea and a good book in hand. Ahhhh… what more do you need. True bliss. Do try this recipe and enjoy your day.

Recipe for nankhatais:

Ingredients:

  • 1 cup – Maida (Refined flour)
  • 1/2 cup – Ground sugar
  • 1/2 cup – Ghee melted (Clarified butter)
  • 1/4 tsp – Elaichi powder (Cardomom)
  • A pinch of baking powder

Method:

  1. Beat together sugar and ghee till light and fluffy.
  2. Add the maida mixed with baking powder and elaichi powder to it, mix with light hands.
  3. Do not knead the dough, make small balls of it lemon sized and arrange on a greased baking tray, bake in a preheated oven at 180-degree for 20 to 25 mins or till done.
  4. Every oven temp differs so keep an eye on them till the Nankhatais become golden.
  5. Once done take them out and after 5 minutes cool them on a wire rack. Enjoy desi nankhatais. Happy baking.
