Nacho chips are everyone’s favourite, its always a crowd-puller in any party, especially kids’ birthday parties. The first thing I do when I go to the movies is enjoy my nacho chips with a cheesy sauce rather than popcorn. But at home, I like making my own nacho chips for my family. I don’t remember the source of the recipe but have given it many variations and my family has enjoyed them. Sometimes, we should forget our calorie counting and indulge in such treats. And believe me, as it is not coming out of a packet it’s not as bad since there is no added MSG (Monosodium Glutamate) or preservatives. People have tried the baked version but will not get the same taste as the fried ones. So if you are planning to indulge, please indulge fully. So here is my take on the Mexican Nacho Chips. Hope you enjoy them and stop buying the packed ones.

Recipe for Nacho Chips

  • 1 ½ cups – Maize flour or corn meal
  • 1 cup – Maida or all-purpose flour
    (You can use whole wheat flour also but there is a difference in the texture)
  • ½ tsp – Oregano
  • ½ tsp – Chilli flakes
  • ¾  tsp – Salt
  • Warm water for kneading the dough
  • 1 tbsp – Oil
  • Oil for frying
  • Dry flour for rolling the dough

Method for Nachos:

  1. Knead the flour using warm water to make a semisoft dough using all the ingredients listed above except oil for frying and dry flour. Cover with a damp cloth and let it rest for 1 hour.
  2. Divide the dough into small balls and roll out small puri-sized thin rotis or tortillas. Prick all over and then heat a pan and place the rolled tortillas on it and let them cook for about a minute on medium flame. Then flip and cook on the other side till it is just cooked. Make sure that no brown or red spots appear and don’t let them turn crisp.
  3. Make all the tortillas like this and when they are ready, cut into 8 triangles and deep fry them in medium-hot oil. Drain them out on absorbent paper, and sprinkle them with the masala. Recipe is given below.

Ingredients for the sprinkle masala:

  • 2 tbsp – Chilli powder
  • 1 tsp – Cajun spice powder
  • 1 tsp – Onion powder
  • 1 tsp – Garlic powder
  • 1 tsp – Pepper powder
  • Salt to taste
  • Sugar to taste
  • Aamchur (dry mango) powder or citric acid powder to taste

Method for sprinkle masala:

  1. Put everything in a small blender jar and give it a mix till a fine powder is made.
  2. Sprinkle on the nachos while they are still hot.

Ingredients for the cheesy dip:

  • ½ cup – Mayonnaise
  • 4 tbsp – Hot chilli sauce
  • 3 tbsp – Ketchup
  • 2 cloves – Crushed garlic
  • ¼ tsp – Red chilli flakes
  • 1 tsp – Vinegar
  • ½ tsp – Honey
  • Chopped pickled jalapenos and gherkins – A few

Method for cheesy dip: 

  1. Mix everything up in a bowl. Add salt if needed. You can also add garlic powder instead of fresh, crushed garlic. The dip should be salty, sweet, spicy and tangy. Enjoy with a cheesy dip with nachos!

    Didn’t knew to roast tortilla den fry, alwyz directly fried dats y was never happy with d result..Wil try out this version now.
