This soup is my son’s favourite soup of all the soup varieties available in resturants, so I always wanted to try this soup at home and finally after some trials got the perfect taste of the soup according to my sons taste buds, and when he tasted it he gave me full marks and said mommy its better than the restaurant’s soup…. I was so happy to see a big grin on his face and the way he was enjoying his soup, as the soup I knew had all the goodness of vitamin c, along with the healthy home made flavourful chicken stock, believe me making a good hearty flavourful chicken stock at home is not that difficult. I have shared a very quick recipe of pressure cooked chicken stock which is much faster and easier to make than the slow cooked chicken stock which takes around 1 hour of slow cooking. Do try the recipe for chicken stock and make your soups more healthy and flavourful.

This is the best soup I have come across, it’s a indo-chinese dish and is full of vitamin C, as it has ingredients like lemon, coriander and has the goodness of veggies, and home made healthy chicken stock.
This one bowl of vitamin C enriched soup is helpful in boosting the vitamin C levels in your body and as we all know vitamin C is helpful in reliving cough and cold, so give bowlful of this comforting soup to your loved once on the day they feel down or any other day they wish to have. Enjoy…

fullsizerender_4RECIPE FOR LEMON CORIANDER CHICKEN SOUP:
Ingredients:

  • 4 cups – Chicken stock (as recipe given in the link here)
  • 1 stalk – Lemon grass (chopped finely)
  • 1 inch – Ginger smashed coarsely
  • 2 to 3 –  Cloves of garlic roughly smashed
  • 1 tsp –  Green onion finely chopped
  • 5 to 6 – Whole peppercorns
  • Handful of coriander roots washed and cleaned
  • Zest of half a lemon

  1. Take all the above ingredients in a big vessel and let it boil for about 5 to 6 minutes.
  2. Then turn off the flame and let it cool for few minutes.
  3. Drain the flavored stock from a big strainer.
  4. Reserve the flavorful stock, Keep aside.

  • ¼ th cup – Finely chopped cabbage
  • ¼ th cup – Finely chopped carrots
  • ¼ cup – Boiled chicken cut into small pieces
  • 1 – Fresh green chilly chopped finely
  • 2 tsp – Lemon juice or as much sour you like
  • ¼ tsp – Sugar
  • A big pinch of ajinomoto (Optional)
  • 1 ½ tbsp – Cornflour mixed in ¼ th cup water
  • ¼ th cup –  Fresh coriander leaves chopped
  • 1 tsp – Oil to sauté the veggies
  • Pepper to taste
  • Salt to taste

Method to make the Soup:

  1. Heat 1 tsp oil and add the chopped green chilli, carrots and cabbage and sauté for a while on high flame,
  2. Add the cooked chicken pieces and sauté for a sec then add the salt and pepper to taste and a pinch of ajinomoto , little bit sugar and stir,
  3. Then add the above prepared flavourful stock and bring it to a boil, cook for 3 to 4 minutes then add half of the chopped coriander leaves and mix well.
  4. Immediately add the cornflour mixture while stirring continuously on low flame, if you think that the soup has not got its desired thickness then add some more cornflour.
  5. Make sure that there are no lumps while mixing the cornflour.
  6. Simmer for another few minutes and reduce the flame and add the lime juice, stir and simmer for about 5 minutes.
  7. Turn off the flame, add the remaining coriander leaves mix well and taste the seasonings, adjust accordingly, serve immediately.

NOTE:

  • I have added cornflour to the soup, as my son likes thick soups, you can omit the cornflour in this soup if you wish to have a clear soup consistency, both the way it tastes awesome.
