HEALTHY CREAMY VEG SALAD

My family is a die hard fan of Subway salads and subs and each time I see them have it I would get worried as I can only see tons of mayo sauce drizzled on top of those healthy veggies. Whenever I tried to stop them they would say then get some healthy substitute to this, and it should be equally tasty and creamy. Thinking to find a healthy substitute to this, I suddenly remembered my old recipe of healthy mayo which I had invented during my college days! At that time my mom won’t allow any unhealthy stuff like mayo in our home so had found a recipe to make my coleslaw sandwiches more creamy without using mayo.

And this subway salad tasted just like it, I added some more sauces to my healthy mayo recipe and bingo the subway dressing was made, I made the salad with my healthy ingredients and served my family, but never told them that its healthy, after they were finished eating I revealed the secret to them and they were pretty surprised.
Sharing with you all the same recipe, so say good bye to the globs of mayo added unhealthy salad and say hello to healthy creamy veg salad.

I have replaced the unhealthy mayo with some hung curd and some other sauces to bring out the exact creamy and tangy flavor, I like my salads with a hint of sweetness, so added apples, pineapples and pears,it will add crunch and freshness to the salad.
This salad is perfect for a healthy summer lunch or a easy –breezy dinner, as you can make the components of the salad ahead of time and at the time of serving the salad just toss them together, this salad is also hit in parties or small family gatherings. Enjoy!

RECIPE FOR HEALTHY CREAMY VEG SALAD
  Ingredients for the salad:

  • 2 to 3 – Slices of pineapple chopped into chunks
  • 1 medium – Apple cut into chunks
  • 1 medium – Pear cut into chunks
  • 2 small – English cucumbers cut into chunks (or normal cucumber peeled and de-seeded)
  • 1 small –  Green capsicum chopped finely into cubes
  • ¼ th cup – Black and green grapes mixed
  • 1 medium – Carrot peeled and chopped into small pieces
  • 5 to 6 – Cherry tomatoes halved (if you don’t get cherry tomatoes, then de-seed the regular tomato and cut into cubes)
  • 6 to 7 – Crisp lettuce leaves
  • 2 tbsp – Sliced black olives (bottled)
  • 2 tbsp – Sliced jalapenos (bottled)

  • 200 gms – Thick hung curd ( use fresh curd that is not sour)
  • 1 tsp – Freshly grated garlic
  • 1 tbsp – Hot sauce
  • 3 to 4 tbsp – Mustard sauce
  • 3 tbsp – Hot and sweet tomato ketchup
  • A dash of soya sauce
  • 1 tsp – Freshly chopped deseeded green chillies
  • 2 to 3 tbsp –  Fresh coriander leaves finely chopped
  • 1 tsp sugar
  • 2 tbsp – Fresh cream ( I used low fat cream)
  • ¼ th tsp – White pepper powder or as per taste
  • Salt to taste

  1. Hang the curd in a muslin cloth for 1 and ½ hrs or else put the curd in a big plastic strainer like soup or juice strainer and put a bowl underneath to collect the whey of the curd, leave it aside when the whey or water is fully drained it will look like the pic below. If you are living in hot climatic conditions then hang the curd inside the refrigerator.
  2. Take the hung curd in a bowl and whisk it with a whisk or a fork to make it smooth and even.
  3. Add all the ingredients in the hung curd and whisk again till everything is mixed properly to a homogeneous mixture. (if you like your dressing less tangy then adjust the quantity of the sauces according to your taste-buds.)
  4. Chill the dressing in the fridge till ready to toss the salad.

  1. Cut all the veggies and fruits as in the ingredient list.
  2. Mix all the veggies and fruits in a big tossing bowl.
  3. In it add the above prepared dressing and toss or mix the salad well till all the veggies and fruits are completely covered with the creamy dressing.
  4. Make a bed of lettuce leaves on the serving plate and serve the salad on it.
  5. Garnish with sliced olives and jalapenos
  6. If you like drizzle on top lightly with some more hot sauce and mustard sauce as my family loves their salad to be tangy so I add more sauce on top (you can omit this step if you want).

  • If you want to serve your salad later in that case you can do the prepping work like making the dressing separate, and chopping the veggies and fruits, keep both of them separate and while serving toss them both together and serve on the bed of lettuce leaves.
  • Use fresh curd, the curd shouldn’t be sour other wise it would change the flavor of the dressing and preferably use greek yogurt or thick curd.
  • Serve your salad chilled.
