Valentine’s day is dedicated to love, but for me everyday is a Valentine’s day with the love of my life, and everyday I try to do something special to make him happy and bring a smile on his face… When I see him smiling and happy my day is made… that’s what love is all about, don’t you think the same!
To make “Love Day” more special and romantic we don’t celebrate it only one day, but the whole week is Valentine’s week celebration for us.

I bake these cute Valentine’s special fortune cookies with personalized romantic messages for him, we celebrate the week like a countdown to Valentine’s Day, each day we eat a yummy fortune cookie and read the sweet love notes, even naughty romantic notes add to the fun more!

And with Valentine’s Day not too far away I wanted to share with you all a super romantic and yummy crunchy fortune cookie recipe. I believe that instead of giving a meaningless expensive gift to your Valentine, do something which has a personal touch to it, like baking these valentines special fortune cookies for a change.

HAPPY VALENTINES DAY TO ALL OF YOU…

RECIPE FOR FORTUNE COOKIES
Ingredients:

  • 1 cup – Maida (All purpose flour)
  • ¼ cup – Rice flour
  • 1 cup – Powdered sugar
  • 2 tbsp – Corn starch or flour
  • ¼ th tsp – Salt
  • 4 Nos – Egg whites
  • ¼ cup plus 2 tbsp – Sunflower oil
  • 1 tbsp – Water
  • 1 tsp – Vanilla essence
  • ¼ tsp – Almond extract (Optional)
  • Red food colouring few drops or as needed
  • Sil-pad (nonstick pads essential to make these cookies)
  • Piping bags
  • Toothpick
  • Spatula to flip the cookies
  • Printed or hand written messages on a strip of paper around 3 to 3.5 inch long
  • Muffin tray to hold the cookies after shaped

  1. Take all the dry ingredients in a big bowl like maida, rice flour, sugar powder, corn flour, salt and mix with a whisk till well incorporated.
  2. Whisk the egg whites till lightly frothy.
  3. Now create a well in the middle of the flour mixture and add the oil, vanilla essence, almond extract and water and mix well, at this point the batter will look stiff.
  4. Add half the beaten egg whites and mix well with a spatula or big spoon, when mixed well add the rest of the egg whites and mix again till everything makes a smooth homogeneous mixture.
  5. Now divide the batter take out ¼ of the batter and mix red food colouring to it and mix well, remember not to add to much food colour add drop by drop and mix and see accordingly add till the desired colour is achieved pour in a piping bag and tie the piping bag with a rubber band tightly, keep aside.
  6. Transfer the remaining batter to another piping bag and secure with a rubber band as shown in the pic below.
  7. Preheat an oven to 160 degrees celsius for 10 mins.
  8. Keep ready 2 baking sheets on them put the sil-pads, this sil-pads are very helpful while baking this kind of cookies which tend to stick to even baking pans and parchment paper.
  9. Put 2 blobs of white batter coin sized at a distance and flatten it like a thin dosa, as shown in the pic below, make sure don’t leave any holes in the cookies and spread them thin as shown.
  10. Put drops of red batter on the spread white batter and with the help of a tooth pick make heart shapes as shown in the pic below.
  11. Do only 2 cookies at a time as the moulding of the cookies has to be done immediately after taking it out of the oven. As they start to cool they tend to become brittle and it would be hard to mould them. I did it by my self, but if you have an extra hand to help you then you can bake 4 at a time 2 for each of you to mold quickly.
  12. Put the tray in the preheated oven at 160 degrees celsius and bake them for 8 to 10 minutes or till the edges start to get golden brown.
  13. Take out the cookie tray and quickly flip them with the help of a spatula as shown in the pic below.
  14. Place a fortune message inside and fold it into a semi-circle as shown in the pic below.
  15. Then with hand gloves or kitchen towel pick it up and shape it on the edge of the cup as shown in the pic below.
  16. Immediately place them in a muffin tray so that they hold their shape when warm and don’t open up as shown in the pic below. Let them cool and harden then you can take them out and store them in airtight boxes or bags.

9. Now using a tooth-pick make the hearts design.

11. One more patter I tried. You can make any patterns you like, use your creativity to create different patterns.

13. After baking flip the cookies with the help of a spatula at this time the cookies are hot and soft and easy to shape.

15. Place a fortune in the middle.

16. Fold into a semicircle with the help of a spatula or wear hand gloves, I could do it with my bare hands as I have years of practice in handling these hot cookies, be careful not to scorch your hands.

17. Pick the cookie up and fold it on the edge of a mug, at this time the cookies are hot so be careful if using a hand gloves is not comfortable hold it with the help of some tissue paper. Moulding of the cookies has to be done quickly when hot if the cookies cool down they will become brittle and break and you won’t be able to shape them.

18. After shaping place them in a muffin tray so that they don’t open up and hold their shape cool them in the muffin tray till completely cooled and hardened.

  1. I have made half the quantity given as it a long processes to make 2 cookies at a time, it yields 19 to 20 cookies with half the quantity of ingredients.
  2. The moulding of the cookies has to be done within few seconds after taken out from the oven when they are still soft as the cookies tends to crisp up and it would be difficult for you to mould and they will break.
  3. Keep your fortunes ready when you take out the cookies from the oven to fill inside the cookie immediately.
  4. Wear hand gloves while shaping the cookies as they are pretty hot just out from the oven, be careful not to burn your hands. I have been making these cookies from long time, so now I can shape them with my bare hands too, if wearing gloves is giving you trouble to shape the cookies then hold them with thick layers of tissue paper instead.
  5. While one tray is baking make the other tray ready with 2 cookies shaped for making the process fast, if you have extra hands to help then it becomes easy to mould more cookies at a time.
  6. If you find it tiring to make small cookies then go ahead make giant cookies to finish the batter they too look adorable, just keep in mind not to make them thick, keep them medium thin as shown in the pic.
