Tacos are again a Mexican classic and are always a hit with everyone. The crunchy corn taco shells are filled with juicy chicken mince filling, topped with a tangy fresh tomato salsa, freshness’s is  added  with some crisp lettuce leaves and richness with some sour cream and grated flavorful cheese, just a messy bite into it and its a burst of flavors partying inside your mouth just yummmm…..

My family just loves Mexican cuisine and that’s the reason I keep on experimenting with Mexican flavors in my kitchen to surprise them, in fact Mexican cuisine is very easy to make and you can whip up a Mexican meal anytime in a jiffy if you have your Mexican spice mixes, sauces and salsas ready in your kitchen pantry. Believe me once you try these you will get addicted to this flavorful cuisine .It’s so much fun as you can arrange all the components of the recipes in serving bowls on the dining table and each individual can pick up their own taco shells and create their own tacos based on their personal likes and preferences.

4RECIPE FOR CHICKEN TACOS
Ingredients for the chicken filling:

  • 2 nos – Chicken breast boneless chopped into fine cubes or else you can also use 200 gms coarsely done chicken mince
  • 1 nos – Red onion big chopped finely
  • 2 tbsp – Garlic chopped finely
  • 2 nos – Green chillies chopped finely
  • 1/4h cups of each – Red, Green and Yellow bell peppers chopped into small dices
  • 2 +2 tbsp – Taco seasoning mix (Recipe given below)
  • A dash of lime juice
  • 1 tbsp – Hot and sweet tomato ketchup
  • ½ tsp – Tabasco sauce or red chilli sauce(Optional)
  • 2 to 3 tbsp – Fresh coriander leaves chopped finely
  • 1 tbsp +1tsp – Oil to cook the filling
  • Salt to taste

Method to make the filling:

  1. Chop the chicken breast into fine small cubes approx. green pea sized
  2. In the chopped up chicken add 2 tbsps. of taco seasoning mix (for recipe scroll down), and let it marinate for at least ½ an hour, keep aside.
  3. After half hour heat 1 tsp. oil in the pan and heat on medium flame, add the marinating chicken and sauté on medium to high flame cook till the chicken is cooked properly and the extra moisture has evaporated.
  4. Take it out in a bowl and keep aside for later use.
  5. In the same pan heat 1 tbsp. oil more and add the chopped garlic and onions along with the green chillies and cook on medium flame till the onions are lightly soft.
  6. Add to it all the chopped colorful bell peppers and fry for couple of minutes on high flame, do not overcook the bell peppers it should have a crunch to them after cooking , add the remaining 2 tbsp. Taco seasoning mix (Scroll down for the recipe), add the tomato sauce, tobacco sauce and stir fry for 2 to 3 minutes on high flame.
  7. Add the above cooked chicken and give a good mix, at last add a dash of lemon juice and chopped fresh coriander leaves and switch off the flame. Your filling is done keep aside.

5Ingredients for the Taco seasoning mix:

  • 2 tbsp – Chilli powder
  • 1tsp – Garlic powder
  • 1 tsp – Onion powder
  • 1 tsp – Dried Oregano flakes
  • 1 tsp – Paprika powder
  • 1 tbsp – Cumin powder
  • ½ tsp – Black pepper powder
  • ½ tsp – Sugar powder (or as per taste)
  • 1 tsp – Corn flour
  • Salt to taste
  • You can also add a cube of chicken stock crushed in this for more taste if adding chicken stock cube then add salt after checking as the stock cube has salt in it.

Method to make the Taco seasoning mix:

  1. Mix everything in the ingredients list for the taco seasoning mix till well incorporated and no lumps are there, use as required in the recipe, you can make this seasoning powder and keep in an airtight small bottle.

6Ingredients to make the fresh tomato salsa:

  • 2 nos medium – Tomatoes chopped finely
  • 1 nos medium – Onion finely chopped
  • 1 big clove of – Garlic finely minced
  • 1 nos – Jalapeno finely chopped
  • 2 to 3 tbsp – Coriander leaves finely chopped
  • 1 tbsp – Lime / lemon juice
  • A dash of hot Tabasco sauce
  • Salt to taste

Method to make the fresh tomato salsa:

  1. Mix everything together in a bowl and muddle lightly with the back of a big spoon.
  2. Keep in the refrigerator for an hour, do make this in advance so that all the ingredients gets infused with each other and you get maximum flavor from the salsa.

7Ingredients to make the sour cream sauce:

  • 2 tbsp – Mayonnaise
  • 8 tbsp – fresh cream ( I used amul cream)
  • 4 tbsp – Thick yogurt

Method to make the sour cream sauce:

  1. Mix the mayonnaise, fresh cream, and thick yogurt and whisk well to mix well, your sour cream sauce is ready.

8Other ingredients needed:

  • 8 to 10 nos – Golden Taco shells (store bought)
  • Shredded lettuce leaves as required
  • Pickled Jalapenos or red hot peppers as required(for recipe click here) or use store bought (Optional)
  • Sour cream sauce as required (recipe given above)
  • Grated cheddar cheese or any mix of Mexican cheese you like
  • Lime wedges as required.

Method to assemble the Chicken Tacos:

  1. Arrange all the things on a working table or kitchen counter or else you can keep everything on the dining table and each individual can assemble their own tacos as per their preferences.
  2. First of all hang the taco shells in the grill rods or the rack of the oven and bake them in a preheated oven at 200 degrees Celsius for 5 to 6 minutes or until they crisp up, do read the instructions given on the taco shell box for it.
  3. Take the taco shells out and cool for a second, then add the chicken filling first in the shells, followed by tomato salsa, shredded lettuce leaves, some grated cheese and top with some pickled jalapenos, serve immediately your crispy spicy tangy Chicken Tacos are ready to be devoured.
  4. Repeat with all the taco shells and serve, enjoy a Tex- Mex meal with your family and friends anytime at the comfort of your home.
