Ahaa.. Tex-Mex! I just love Tex-Mex flavors, and “Chicken Fajita Quesadilla” is one of those dishes in which onions are sautéed along with colorful bell peppers, tender strips of chicken breast juicy and moist perfectly seasoned with my homemade fajita seasoning mix, topped with sinful oodles of melted cheese which holds together everything between two tortillas, accompanied with creamy sour cream and a tangy chunky tomato onion salsa, mmmmmmm…..Simply yum… this is LOVE on plate….

These Tex-Mex Chicken Quesadillas are always a hit with adults and kids alike, it’s a burst of flavors in your mouth with every bite you take, who wouldn’t like it??? I bet no one can say no to these sinfully yum quesadillas, as once in a while this kind of indulgence is needed to break the monotony of routine life don’t you think so…
My family loves Tex-Mex cuisine! As it has all the punch and spice from the use of similar spices and ingredients we Indians use. I started cooking Mexican and Tex-Mex cuisine at home as my son has a huge liking for this kind of food and every weekend we would end up at his favorite Mexican restaurant, so I decided to make the same dishes at home as it’s not so difficult to recreate the same flavors at your home kitchen in fact it’s too easy just the prepping takes hardly half an hour and then at your meal time you can whip up these Chicken Quesadillas in a breeze, and using store bought tortilla makes life much more  easier and you can enjoy a soul satisfying meal with your loved ones… what more do you need.

Pssst…Sometimes I do a cheat version for my hungry kiddos snack craving or after school meal and make these quesadillas with the home made chapatis/rotis with any interesting filling there in my fridge be it roasted chicken or chicken tikka or soya chunks dry sabzi or even any paneer sabzi whatever is left over, just take the rotis slather it with some tomato salsa sauce if available or else add tomato ketchup simply and add some chopped onions and capsicum along with the leftover filling  or any subzi you want to add in and top it up with the grated cheese of your choice fold it and cook till the cheese melts and the roti is crisp from both the sides, and a quick yummy snack is done for your hungry souls, and where cheese is there you can never go wrong everything is allowed with cheese, kids notions….He he he  😉 😉

Ingredients for the filling:

  • 2 nos – Chicken breast boneless ( cut into long strips)
  • 2 nos medium – Onions sliced finely lengthwise
  • 1 tbsp – Garlic finely chopped
  • 1nos – Yellow bell pepper cut lengthwise
  • 1nos – Red bell pepper cut lengthwise
  • 1nos – Green bell pepper cut lengthwise
  • 1nos – Big tomato deseeded and cut lengthwise
  • 2 tbsp – Fajita seasoning ( recipe given below ) ( totally 4tbsp. needed in the whole recipe, 2 tbsp as mentioned below for marinating the chicken and 2 tbsp. to cook the veggies)
  • Lemon juice optional
  • 1 tsp – Red chili flakes
  • Pickled Jalapenos or red hot peppers (Click here for recipe) or use store bought
  • Salt and pepper to taste
  • 2 tbsp – Oil to cook the  veggies & chicken
  • Coriander leaves chopped finely (Optional)

Other ingredients:

  • 6 nos – Tortilla wraps ( store bought)
  • Grated Cheddar cheese or whatever cheese you prefer to be added inside the Quesadillas as required

Sauce and salsas needed:

  1. Red hot tomato 🍅 salsa ( recipe is given below)
  2. Raw chunky tomato 🍅 salsa( recipe is given below)
  3. Sour cream sauce ( recipe is given below)

Ingredients for marinating the chicken strips:

  • 1 tsp – Ginger& garlic paste
  • 2 tbsp – Fajita seasoning powder ( recipe is given below)
  • 1 tsp – Oil
  • 1 tsp – White vinegar
  • 1 tsp – Red chili sauce
  • Salt to taste ( be careful while adding the salt as the seasoning and the sauce already has salt added to them )

Method to marinate the chicken:

  1. Mix all the ingredients given under marinating list  with the chicken strips and keep aside for ½ an hour.

  1. Heat 1 tbsp oil in a pan add the marinated chicken and sauté the chicken on high heat, cook the chicken tossing at intervals till the chicken is fully cooked and tender.Take it out in a bowl and keep aside.(don’t over cook the chicken let it be moist and tender)
  2. In the same pan heat 1 tbsp oil more, add the sliced onions and chopped garlic, add some salt so that the cooking process of the onions fastens, fry them till the onions sweat and soften till light pink
  3. Add all the lengthwise cut bell peppers and sauté on high flame, add the remaining 2 tbsp fajita seasoning powder along with salt and pepper to taste, sauté for a while then add the chili flakes, and sliced deseeded tomatoes and stir fry.
  4. Add the above-cooked chicken in it and stir fry, remember don’t overcook the bell peppers, they should still have a crunch in them
  5. Add some red chili sauce and sauté for few seconds, at last, add some chopped coriander leaves if you like, switch off the flame your filling is ready.

Ingredients for the Fajita seasoning mix:

  • 1 tsp – Onion powder
  • ½ tsp – Garlic powder
  • ½ tsp – Cumin powder
  • ½ tsp- Cayenne pepper powder or else Kashmiri chili powder
  • 1 cube of – Chicken stock cube ( I used Maggie chicken cube)
  • 1 tsp – Sugar powdered
  • 1 tsp – Paprika powder
  • 2 tsp – Chilly powder
  • 1 tbsp – Corn starch powder
  • 1 tsp – Salt

Method to make the Fajita seasoning powder:

  1. Mix all the ingredients of fajita seasoning and use in making the fajita filling. You can make this seasoning and store in an airtight bottle to be used anytime.

  • 3 to 4 medium – Tomatoes
  • 1nos – Onion finely chopped
  • 1 tsp – Garlic grated
  • ¼ th tsp – Cumin powder
  • 1 tsp – Chili flakes
  • ½ tsp – Chili powder
  • 2 green – Green Chilies chopped finely
  • ½ tsp – Sugar
  • 2 to 3 tbsp. – Hot and sweet tomato ketchup
  • Salt to taste

Method to make the Red hot tomato 🍅 salsa sauce:

  1. Make a cross slit at the bottom of the tomato and prick a knife or a fork in the tomato and hold it directly on the flame, this will char the skin a bit and the skin of the tomatoes will peel off easily, same way repeat with all the tomatoes and peel them then chop all the tomatoes finely.
  2. Heat oil in a pan add the chopped onions garlic and green chilies, fry till translucent.
  3. Add the peeled and chopped tomatoes along with cumin powder, chilly powder, chilly flakes, sugar and salt, cook the tomatoes till they are mushy and forms a smooth sauce.
  4. At last, add the hot and sweet tomato ketchup and cook till the sauce thickens, switch off the flame and cool, keep aside. This sauce can be stored in a refrigerator in a sterilized glass bottle with a tight lid for 8 to 10 days.

  • 2 tbsp – Mayonnaise
  • 8 tbsp – fresh cream ( I used Amul cream)
  • 4 tbsp – Thick yogurt

Method to make the Sour cream sauce:

  1. Mix the mayonnaise, fresh cream, and thick yogurt and whisk lightly to mix well, your sour cream sauce is ready.(do not over beat the sauce just mix to combine the  ingredients well)

Ingredients for making the Raw chunky tomato 🍅 salsas :

  • 3 cups of – Tomatoes peeled and chopped finely(peel the tomatoes as mentioned in the salsa sauce above)
  • 1nos – Onion chopped finely
  • 1 -2nos – Jalapeno chill’s chopped
  • 2 to 3 cloves of – Garlic chopped finely or minced finely
  • ½ tsp- Chilly powder
  • ½ tsp – Black pepper powder
  • 1/ 4 th cup – Fresh coriander or cilantro leaves chopped finely
  • 1 tbsp – lemon juice or as required
  • Salt to taste

Method to make the Raw chunky tomato 🍅 salsa:

  1. Take half of the peeled and chopped tomatoes, in a mixer grinder, add to it chopped onions, garlic, jalapenos, red chilly powder, salt and pepper to taste and blend into a coarse mixture.
  2. Now add the remaining tomatoes, fresh coriander leaves lemon juice and give it 2 to 3 short blitz, till  a chunky salsa consistency is achieved.
  3. Take out in a bowl and keep aside till use.
  4. You can store this salsa for 3 to 4 days in an airtight sterilized glass bottle in the refrigerator.
  5. This salsa can be served with nachos, tacos and burritos too.

Method to assemble and cook the Chicken Quesadillas:

  1. Take a tortilla wrap and on the half part apply some hot tomato salsa sauce prepared above.
  2. Then add the above chicken fajita filling on that half part of the tortilla wrap, add some pickled red hot peppers or jalapenos for that extra heat(click here for recipe)
  3. Top it with some grated Cheddar cheese or any cheese you like it maybe Mozzarella, Gruyere, Monterey Jack, Gouda (not aged) or any cheese you like which melts when heated is good to go, be generous with the cheese, you can also add a combination of different cheese 🧀 if you like.
  4. Then fold it in half and grill it on a medium hot grill pan with a little bit of oil sprayed on, cook on medium flame till both the sides of the quesadillas are golden and crisp and the cheese has melted inside.
  5. The second method is by using 2 tortilla wraps as I have shown in the photos , then you can cut them in triangles or quarters.
  6. Serve them immediately with sour cream and chunky tomato salsa.

  1. I have used the fajita seasoning to make my chicken filling which I use it in my fajita rolls too, this filling is versatile you can use it inside sandwiches, rolls, burritos, tacos etc. the options are endless.
  2. Here I have used fajita seasoning powder, you can use any other seasoning of your choices like Peri-peri, Cajun, Taco seasoning, or any other seasoning powder you like it’s up to your choice, as my family likes this blend of spice so I have used it.
  3. Adding of cheese is must in this recipe as the melting of cheese is what holds the filling of the quesadillas intact inside.
  4. You can choose any of the 2 methods to assemble the quesadillas either fold in half or use two tortilla wraps and sandwich the filling and the cheese inside and cook them until crisp.
  5. The tortilla wraps get cooked very fast so keep an eye on them and don’t burn them on high heat.
  6. If you don’t have a grill pan no need to worry just use any flat nonstick pan to cook them until crisp on both the sides.
