Vegetable Bread Pizza is a quick and easy recipe for your kiddo’s breakfast, snacks or tiffin box. This recipe can be made by 3 methods, i.e. on a tawa or pan with lid, or it can be baked in convection oven or Otg oven, or the best method which I like is cooking it half in the microwave till the cheese melts and then transferring it to a lightly greased pan or tawa with lid to crisp up the base of the bread from bottom. This last method is my favorite as it takes the least time to cook as compared to the other two methods and that’s what I need when I am in a hurry in the morning hours. For this method I arrange all my bread pizza slices and then zap it in microwave normal mode for 30 to 35 seconds or till the cheese is just starting to melt then I transfer them onto a slightly greased pan or tawa (griddle) with a lid on them till crispy from bottom and cheese is melting on top, but be careful as it cooks in a jiffy so keep an eye on them so that they don’t burn from the bottom.
I have also given the other two methods in the recipe below do choose the method which suits you better, every method would yield you yummy bread pizzas always.

Here in my recipe I have used pizza cheese, you can use mozzarella cheese or even cheese slice if you are feeling lazy to grate cheese even. Actually I use cheese slice when I am packing these bread pizzas for my kids tiffin box as the pizza cheese and mozzarella cheese doesn’t taste good when they turn cold and they turn chewy so it’s a better option to use either cheddar, processed or simply put a cheese slice as it always worksfor me the best. While packing it for your kids tiffin box always bring them to room temperature after cooking them and lightly pack in aluminum foil so that they stay intact till your kid eats it. I have used ready-made Veeba pizza on a sliced sandwich spread for this recipe and it tasted just yum….
Sometimes  I too want to enjoy these bread pizza but the calorie freak in me stops me from having it, so I make them without cheese and opt for brown bread and enjoy my healthy pizza, do try it this way it’s a good option for calorie conscious people. Just play around with your favorite topping be it veg or non-veg and enjoy them.

FullSizeRender_6RECIPE FOR VEG BREAD PIZZA
Ingredients :

  • 6 slices – Bread of your choice
  • 4 to 5 tbsp – Pizza on a slice sandwich spread of Veeba
  • 3 to 4 tbsp–Hot and sweet tomato sauce
  • 1 medium – Onion chopped finely
  • ¼ thof – Green capsicum chopped finely dices
  • ¼ th of – Red bell pepper chopped finely into dices
  • 1/4th of – Yellow bell pepper chopped finely into dices
  • ¼ th cup – Frozen corn kernels defrosted
  • Pizza cheese grated as needed to top the slices
  • Dried oregano, red chilli flakes or mixed seasoning to sprinkle on top
  • Oil to grease the tray or pan in which you are cooking the pizza
  • Salt to taste
  • You can add any toppings of your choice like jalapenos red or green, olives black or green, mushrooms, tomato cubes without pulp, paneer cubes etc.

  1. Chop all the veggies and arrange all the toppings you like to add on top, keep aside.
  2. Grate the cheese and keep aside, mix the Veeba pizza on a slice sandwich spread and the hot and sweet tomato sauce and keep aside.
  3. Take the slices of bread and apply the above sauce mix on it in a thin layer.
  4. Add the grated cheese on top of the sauce layer, and top with the chopped veggies and other toppings of your choice, sprinkle on top with dried oregano, red chilli flakes or any mixed herbs seasoning, sprinkle a little bit of salt if needed as the sauce and cheese has salt in it so add salt wisely, and if you are adding any pizza seasoning or mixed herb seasoning it may also have salt added to it in that case no need to add any salt.
  5. Meanwhile, when you are preparing the bread pizza slices preheat the oven at 200 degrees Celsius.
  6. Grease a baking tray lightly with oil and place the above-prepared bread pizza slices carefully on the tray and bake till the cheese melts and the bread slice has crisped up a bit at the bottom.
  7. Take out and cut into triangles and serve immediately piping hot.
  8. If you don’t have an oven so no need to worry this recipe can be made on a Tawa(Griddle) or a Non-stick Pan with a lid on top for that follow the instructions or method given below.
  9. Heat a flat non-stick pan with a lid on medium flame and add 1 tsp. of oil and spread or smear all over the base of the pan.
  10. Place 2 or more slices as big as your pan is accordingly and cover the pan lower the flame to low and cook till the cheese melts, but keep a check that the bottom of the bread doesn’t burn, keep a close check on it.
  11. When the cheese melts take out carefully and cut into triangles and serve hot immediately.
  12. I generally prefer the 3rd method of cooking it i.e. half time in the microwave normal mode for 20 to 30 seconds or till the cheese starts to melt,  then transfer the half cooked bread pizzas in a heated lightly greased pan or griddle(tawa) with a lid to cover them and just cook till the bottom of the bread crisps up a bit. This method is the quickest method if you have a microwave or else choose from the methods given above it’s all up to one’s personal choice as for how to cook them, any method you choose the end results would be the same yummy cheese colourful Bread Pizzas always that would bring a big smile on your kids or guests face…
